Calypso Brown Rice Salad

Calypso Brown Rice Salad

 

Ingredients:

  • 2.qts fully cooked Cahokia Brown Rice
  • 5.ea valencia oranges cut into supremes
  • 2.ea mangoes diced medium size dice
  • 1.cup dried cranberries
  • ½ cup toasted pumpkin seeds
  • 4.tbsp hemp seeds
  • 2.ea red bell peppers medium dice  (no seeds)
  • 4.ea jalapenos, diced medium (no seeds)
  • 1.bunch cilantro, washed , picked and chopped ( leaves only)
  • 1.bunch green onions, washed, dried and cut on a thin bias
  • 1.bunch mint, washed, picked and chopped ( leaves only)
  • 2.tbsp coriander
  • 1.tbsp cumin
  • 1.cup orange juice
  • 1/2 .cup lime juice
  • ¼ cup apple cider vinegar
  • 8.tsp coconut oil ( added to fully cooked rice while cooling down)
  • 1.cup olive oil

 

Method of prep:

Cook rice in a steamer or rice cooker, once fully cooked add the coconut oil and allow to fully cool down before adding the remaining ingredients to this recipe.

Once fully cooled down add in all of the cut vegetables and fruits to a mixing bowl. Mix well, add in the chopped herbs, finished by the fruit juices and olive oil. Taste for Salt and Pepper. Keep refrigerated until time of service. This rice dish goes very well with fish, seafoods and poultry.
